After watching a few vids on YouTube I received the most confidence from New Orleans Chef Toya Boudy. You'll find the link to her recipe and technique below.<br />Let me start by saying the results were 5-star, taking me back to my youth when this delectable treat was purchased at a small-town store on return trips from Louisiana with my family. But, not to tarry; I followed the recipe to a 't' and was not disappointed. Admittedly, I did use 2% milk instead of whole. This project was spur-of-the-moment; and several steps are worth sharing my experience. After cooking the recipe it is important to have your drop sheet ready. I didn't have parchment paper; so, I used the backs of two large stainless-steel roasting pans. I think a pizza stone would have served its purpose as well. I rubbed a bit of coconut oil to prevent the candy from sticking. I dropped the candies, working as quickly as possible. I could hear her in my ear calmly reassuring me that everything was okay :)... The batter began thickening and I added a couple drops of water instead of milk, less than a teaspoon to thin it back out. I was in 'panic' mode. This was a big relief because I started getting chunky cookies instead of flat candies. Actually I did have half chunky pralines and half flat candies. I put each on separate plates to get a critique on each type. Personally, I loved them both. I loved the chunky cookie type because as Chef Boudy says, fewer trips back for more. Overall, these pralines disappeared quickly. They really were just that good. What I liked most is I knew exactly what ingredients were put in. About the pecans: If you don't have the luxury of shelling fresh pecans, be sure to check your pre-shelled bags carefully to be sure all of the pecans look edible. At the end of the day, this is a recipe, even a novice, certainly should try. If you're looking to make a few extra dollars, and have the yen, you could easily sell these at the local farmer's market or even church b-zaar. I'd recommend putting a warning label about the product containing nuts, dairy, and sugar. Happy eating! By the way, depending on where you're from, these delights are either pra(y)lines or pra(h)lines. Interestingly, everyone I know pronounces them using a long a vowel sound. Tomato, tomahto....praylines, prahlines. I was captivated by Gilbert's spiritual quest and growth; but just as soon as I thought she'd made two steps forward, she jumped right back into the tainted pool that started her on this journey in the first place: the absence of an authentic love relationship. I have to realize she was a young thirty-something when this book was written, so I'll give her a little room for naivete in some of her choices. Clearly the lass she was in Italy had matured significantly by the time she reached Bali; however, it's clear that her demons were still in the shadows at the book's ending. That said, the book was good. It held my attention for the most part. What made it novelesque is that most people who read this, namely women, simply don't have the leisure or finances to dedicate a year of their life to free-willy without regard. For this reason, I found myself reading with a mindfulness that this isn't an ordinary housewife's reality. Financial sustenance has to accompany the desire; and, clearly Gilbert's financial base surpassed most. Also, <b>most</b> love found on leisurely travels end up in the column of flings which in this era of AIDS et al, makes her 'to the wind' decision in Bali questionable. In fairness, a bit of research revealed that Gilbert actually married the love-interest she met in Bali, still rare the case for most vacation-meets. But, enough said. This book was made into a movie for a reason. It almost reads as a script. Again, this is being said by someone who loses interest in most books that read as novels. So. That's it. Nothing more. Though it seems there's more I'd like to say about many aspects of her journey, I'll refrain. As an author, she's clearly talented and her continued writing successes prove this out. Summer's arrived. As I read I found myself curious about how much a novelist can earn with one successful book. I was shocked and sorrowed at the same time considering as I have known for a long time I have near-zero yen for writing fiction. This might be because I do not enjoy reading fiction. It's something about slipping into a fantasy-realm of creating fictitious people filling a beginning, middle and end that just doesn't beckon my spirit.<br />
Of course, I'd love to 'channel' characters in a way that got and held the attention of readers. However, in truth, I'm convinced that's not how I am wired. At least not today; knowing that these giftings awaken without warning from places not of our own design. So kudos to fiction writers everywhere; both successful and aspiring. With that said, I thoroughly enjoyed Lamott sharing writing experiences that an author of any genre could relate.<br />
On another note, Elizabeth Gilbert's <b><i>Eat Pray Love</i> </b>is<i> </i>what I'm currently enjoying. I find myself reading more for her personal awakenings than the touristy descriptions of places she travels for this book. It's very interesting to note that this is a non-fiction work; but, reads with the intertwinings of a good novel.<br />
On a final note. I have probably read fewer than a dozen novels in my lifetime, mostly in my 20s. Perhaps I'll compile a list. I know it will include Toni Morrison's <i><b>Beloved</b></i>, Margaret Mitchell's <i><b>Gone with the Wind</b></i>, John Grisham's <i><b>The Client,</b></i> Stephen King's<i><b> The </b><b>Shining,</b></i> and a few others. As an avid reader most everything I read is nonfiction. <br />
That said, if you're an indie author and want to read the familiar experiences in the life of a writer, while enjoying a laugh or two, I strongly recommend Lamott's<i><b> </b></i><br />
<i><b>Bird by Bird. </b></i>Warning: Occasionally her language can be a bit 'untoward;' therefore should be kept out of reach of young children. You may not experience the depths of your passion until you realize you'd rather spend evenings writing than just hanging out with friends, talking much ado about nothing. My defining moment as a writer was my second semester of college when I felt pressed to choose a major. I can remember being torn between becoming a writer or a psychotherapist. Being young in mind, lacking wisdom, I yielded to the former simply because I didn't realize the two realms dividing psychiatry and psychology. I thought anything beginning with psych...involved writing meds for clients, which I, even at 18, knew was not a path I wanted to take. However, looking back decades, I can clearly see how much more sensible choosing the latter yen would have been, simply because if writing is your thing you don't need to spend four years edumacating yourself with logistics.<br />
Writing is an innate quality, that feels to the true writer an all-consuming fire. People often mistake the quiet demeanor of a writer as being introvert; however, usually the quietness is the person doing what real writers do, composing mental drafts of their next or an ongoing project. I have learned to resist writing pages in my head; because, inevitably, I'll just have to rewrite them when I place fingers to the keyboard. Also, I've learned that it is so important to be in the moment where you are planted at a given time. I've learned to keep scratch sheets handy to jot down keywords to jog my memory, or write in 'shorthand' phrases I want to build on. Admittedly sometimes my hand is a bit too short because it can be near impossible to decipher the meanings of phrases written.<br />
In recent years, I did earn a degree associated with psychology; after accepting that my love for helping trumps that of writing. However, one life-purpose can never replace another. Writing serves a special place which proves both exhilarating and exhausting, while on the other hand, helping clients leaves me feeling exhaustingly exhilarated. It's as though one refreshes the other, if that makes sense.<br />
It's that time of year when many are graduating high school and haven't a clue which academic path to take. The good thing is most college students have at least two years to decide, since core courses are pretty standard for most majors. However, when you reach that juncture where you have to decide, and there are two loves tugging at your heart, select the one with the most concrete career path; because, if one of your loves is writing, as is mine, you will always be prepared for this path as long as there is pen, paper or in modern-day vernacular keyboard and computer. Most schools offer summer-school programs for enrichment. As a proponent of year-round schools I strongly encourage you to allow your child/ren to attend even if they are functioning on grade-level. If you have the summer all mapped out, please include reading and word-problem lessons as part of this very lengthy 12-week hiatus. Most teachers spend the first grading period re-teaching skills from the previous grade's final semester. Even though the curriculum is set up to start from where students left off in the spring, the readjustment period is a lot less stressful if their skills are already 'pencil' sharp.<br />
<br />
One more thing. I'm going to suggest that you begin teaching your 2nd-graders (at latest) basic Spanish-vocabulary. Most countries teach and speak dual-languages. I believe the U.S. is finally moving in this direction. I'm hopeful that eventually all students will be required to master Spanish K-12 classes as part of graduation requirements.<br />

In this instance, I'm speaking of the cover letter required with submission of your resume. My best advice would be to consult either a university's formatting or the most recent version of a contemporary-language handbook. Accepting the advice of random bloggers will most likely lack the formal guidelines expected by employers. Yes, formal. Your cover letter should include a formal heading, not merely a date and greeting. Speaking of greeting, in a recent research I learned that the proverbial "To Whom This May Concern" is considered too impersonal, while "Hello" is too personal. So, with a little research you'll decide what fits the job you're applying for best. In this age of the informal email and text-messaging shorthand; things that matter most are kept to a higher requisite; which makes sense when you put it in perspective of priorities. While LOL might be okay when chitchatting with pals, the cover letter offers employers a glimpse into your ability to communicate beyond the everyday vernacular. So bottom line indies, put your best foot forward when writing a cover letter. After all, it is the writing of this letter that may help you get you the perfect job which blesses you to pursue your love for writing a book with many letters, that is alphabetical letters. Get it? When writing a post, most times I write in MS-Word, then copy and paste into the blog. As most know, this doesn't always transfer true to form; but inadvertently, I will hit the publish button when actually I should hit the Preview button to make sure it reads fair the first time I publish it.</span><br />
<span style="font-size: large;">The habit of hitting publish causes countless updates, and I think may prove a distraction to readers, though they've been too kind to complain. Sometimes, I can only chuckle nervously at what they might get when I'm in the middle of publishing and updating for the 5,000th time.</span><br />
<span style="font-size: large;">So, in a nutshell, self included, train yourself to preview, preview, preview before the final publish. That little orange button staring at me seems to say click me, click me.</span><br />

I grew up in a time when anyone older than you by at least a decade was considered your elder. As such, if you were misbehaving on any level they could acknowledge that your parents would know about your actions. In my day that mattered. And for most youngsters that statement still puts them on notice to straighten up.<br />
How ever, debate as you may, MUSIC MATTERS. I couldn't help but wonder what was on the mp3 player (pods, phones) of the youngsters creating havoc in the city streets. Gangsta' rap, maybe? Parents it's imperative that you stand your ground against things that will corrupt the minds and souls of your children. If they are not 18; you are legally responsible for keeping their heads as clear of smut as you can. Of course, there are peers who influence; but, I am convinced they value your opinions, and they're watching that your activities have a <i>do as I do</i> message.<br />
Something else, EDUCATION MATTERS. As I watched the bedlam of teens looting stores and destroying city property, I contemplated how many of these youngsters were on grade-level, and pondering what college they were hoping to attend, or business they were hoping to start up. As my contemplation continued I pondered how many would have difficulty reading this children's book without stammering. This is in no way meant to insult; but, let's face it: The unrest in the public square represents a very small proportion of the young-adult population. I have faith that the majority of youth are high-achievers with goals for a better life, a better day.The unrest in Baltimore has at its root, the failure to bond with an inner-city group of youngsters who are hungry for guidance and hope that there is life beyond their city block.<br />
Finally, FAITH MATTERS. Fifty years ago God was allowed to leave the schools of America; because of a case that won separation between church and state. I grew up in a time when you were aware of the Ten Commandments and were expected to respect them, and many other Bible principles, whether we knew they were of the Bible or not.<br />
The melee going on in the streets of Baltimore is merely an example of what could potentially erupt in every major inner-city in the United States of America. There are answers; but, a grass-roots effort will be the only thing that sticks. Federal dollars will be lost in trickle-down economy. The people who make face-to-face contact with youth everyday in their commute to and from work are the ones who will make the difference via people-based community events. That's hard work. Indies still need to 'wait tables' while pursuing what they know in their heart-of-hearts they were put into the universe to do. After all, no one believes you're really meant to do something unless your efforts produce sustainable results! In real terms, your project must never trump your need to take care of yourself. Otherwise, you really may become a 'starving artist' :)!<br />
<br />
So let's take a look at balance: time for work, time for play, time for family, time for friends, time to create...24 hours in a day...which leaves on average five hours for each....So, it's probably a good thing to find a part-time job that pays what a full-time gig would pay...let's see....hmmm?....that's something to consider!<br />
